Holiday Recipe – Eclair Cake

This is my favorite recipe to take to holiday parties. It’s easy, quick and loved by adults and children alike.

Eclair Cake - A Pudding Triffle Eclair Cake

Ingredients
2 pkgs French Vanilla Instant Pudding
3 1/2 cups Milk
1 8oz Cool Whip
1 box Graham Crackers
1 1/2 containers Chocolate Cake Icing

Mix
3 1/2 cups milk with the pudding and stir as directed on package. Add Cool Whip and stir again until a consistent color.

Layer as follows in a glass bowl
Graham Crackers
1/2 pudding mixture
Graham Crackers
1/2 of the Chocolate Icing

Repeat the layering sequence and refrigerate.

You may use any flavor combinations you like.  In the photo, I used chocolate pudding and vanilla icing.  I always make mine in a trifle bowl, but I’ve also seen this made in a rectangular cake pan.
